Spring Blueberry Mojito
Warm weather in a drink…. We subscribe to a local farm’s “farm box” which we get to pick up every Friday. We get a whole array of amazing farm fresh fruits, veggies, herbs, and milk/eggs. The best is that they give you a little sheet inside with ideas on what to make with your ingredients, and this blueberry mojito was so so easy and delicious!
Ingredients:
a handful Blueberries
1 cup. Sugar
a handful of Mint Leaves
half of a Lime
1.5 oz. Rum
Seltzer
Directions:
Make your mint simple syrup!! Boil equal parts sugar and water, and once all of the sugar is dissolved, add in about 10 mint leaves. Let it steep for 10-20 minutes depending on how strong you want your mint to be!
In a glass, throw in some blueberries, a few mint leaves, and cut up half of a lime into wedges. Muddle it all together at the bottom of the glass until it’s extremely mushy
Add ice to the glass
Pour over 1.5oz of rum, and 1/2 oz of mint simple syrup (you can add more if you like it sweeter)
Top with seltzer, stir and enjoy!
